Not all pistachios are the same. A few simple tips to help you spot the good ones:
Shell colour
The shell of a good roasted pistachio is light cream and free of stains. Dark or spotted shells can mean the post-harvest process was done late.
Split ratio
A naturally split shell means the pistachio is fully ripe. The fewer closed shells in a pack, the better the product.
Kernel colour
The Antep pistachio kernel is green, and its skin can be purple to red. A yellowish or brownish kernel is a sign of an old or over-roasted product.
Aroma and taste
Fresh pistachios smell slightly sweet and toasty. If you notice a bitter or musty smell, don't eat them.
Size
Size alone is not a measure of quality, but kernels of similar size in the same pack show that the product has been carefully graded.
